As sales increased and olive oil production at La Amarilla
became insufficient, LA Organic
took as its model the system of pagos asociados, common in the world of wine but unusual in the olive-oil sector. This system is a uniquely flexible one, giving the company control both over quantity and quality. Among LA Organic's shareholders are some of the biggest names in the organic olive oil business, such as José Cano (Antonio Cano e Hijos) and Juan Morales Navas
. Together the partners are responsible for blending the oils from the company's 17 different pagos asociados to create LA's exceptional range of extra virgin organic olive oils.
